Confetti Bean Chili


Yield: 12 Servings

1 large onion, chopped
2 can chicken broth
2 cloves garlic, minced
3 Tbsp chili powder
1 1/2 tsp cumin, Ground
1/2 tsp oregano, Dried
1 lb carrots, sliced
1 lb red potatoes, cubed
2 can (14 1/2 oz each), Diced
-tomatoes, un, drained or
3 cup fresh tomatoes, Diced
15 oz can black beans *
15 oz can kidney beans *
15 oz can garbanzo beans *
2 1/2 cup water

* Rinsed and drained

In a Dutch oven, simmer onion in broth for 5 minutes. Add next six
ingredients: bring to a boil. Reduce heat. Cover, simmer 10 minutes.
Add remaining ingredients. Cover simmer 20 minutes.
