Makes 4 appetizer servings Combine citrus juices, watermelon juice, vinegar and jalape os. Add shrimp and shredded mint and let sit 15 minutes. Stir in red onion, roasted peppers and salt and pepper to taste. Add watermelon balls. Serve in chilled martini glasses, garnished with fresh mint leaves.

Yield: 8 Servings

1 1/2 lb lean beef, Ground
2 can green chilies -- 4 oz, Diced
1 ea
4 onions --, Chopped
2 apples -- (granny, Chopped
1 smit
3 garlic cloves --, Minced
3 Tbsp chili powder
32 oz tomatoes --, Chopped
2 Tbsp unsweetened cocoa
15 oz tomato sauce
1 Tbsp curry powder
1 can chicken broth -- (14-1/2
1 oz)
1 tsp cinnamon
3 green peppers, Chopped
2/3 cup almonds, Slivered

In large dutch oven; cook ground beef, onions and garlic until meat
is
browned; drain. Stir in tomatoes, (undrained) tomato sauce, chicken
broth, chopped peppers, green chilies, apples, chili powder, cocoa,
curry and cinnamon. Bring to a boil, reduce heat, cover and simmer
for 1 hour. Add almonds. Heat through. Serve with raisins, cheddar
cheese, yogurt or sour cream. Makes 8 servings.

Caribou Chili


Yield: 8 Servings

4 lb caribou, chunked preferred
-or groun, d
1 lg onion, chopped
2 garlic cloves, minced
1 tsp oregano
2 tsp cumin
1 cup red wine, beef broth or beer
6 tsp chili powder
1 1/2 cup tomatoes and juice or, Canned
- small, can tomato paste
2 tsp liquid hot pepper sauce or
1/2 tsp cayenne pepper salt, To Taste

Place meat, onion and garlic in a large heavy skillet or Dutch oven.
Cook until light colored. Add oregano, cumin, water, chili powder,
tomatoes, hot pepper sauce (more or less to taste), and salt. Bring
to a boil, lowering heat, and simmer for one hour. Optionally, the
sauce may be thickened with a little (1-2 tb.) Masa or Corn meal.
