Yield: 10 Servings
1 1/2 Tbsp olive oil
1 large onion, chopped
4 celery ribs, chopped
1 med green pepper, chopped
2 cloves garlic, minced
1 salt and pepper, To Taste
1 Tbsp brown sugar
1 Tbsp oregano
4 Tbsp chili powder
3 Tbsp cumin
1/4 tsp cinnamon
1 can whole tomatoes, (28 oz.)
1 can v-8 juice, (28 oz.)
1 can black beans, (16 oz.)
1 can pinto beans, (16 oz.)
1 can kidney beans, (16 oz.)
1 can green chilies (2 1/2, Chopped
- oz.)
In large pan, heat olive oil. Saute onion, celery, green pepper and
garlic until onion is transparent. Add sugar and spices. Saute for 2
minutes. Add remaining ingredients. Simmer for one hour.
