Washington: Researchers have revealed that a low carb diet can be beneficial for diabetics. The Swedish group, led by Dr. Jorgen Vesti Nielsen, had previously reported on 16 obese patients on a 20-percent carbohydrate diet over 6 months.

Bill Pfeiffer's "Los Venganza Del Almo" Chili

Bill Pfeiffer's "Los Venganza Del Almo" Chili Yield: 25 Servings 1 Tbsp oregano
2 Tbsp paprika
2 Tbsp MSG (monosodium glutamate)
11 Tbsp gebhardt's chili powder
4 Tbsp cumin
4 Tbsp beef bouillon (instant crushed)

36 oz beer
2 lb pork, cubed (thick butterfly
- pork c, hops)
2 lb chuck beef, cut into cubes
6 lb rump, Ground
4 lg onions, finely chopped
10 cl garlic, finely chopped

1/2 cup vegetable oil (or kidney suet)
1 tsp mole (powdered), also called
- mole poblano
1 Tbsp sugar
2 tsp coriander seed (from chinese
- parsley, cilantro)

1 tsp louisiana red hot sauce
-(durkee's)
8 oz tomato sauce
1 Tbsp masa harina flour
1 salt, To Taste

In a large pot, add paprika, oregano, MSG, chili powder, cumin, beef bouillon, beer and 2 cups water. Let simmer.

In a separate skillet, brown meat in 1 lb. or 1 1/2 lb. batches with Wesson oil or suet. Drain and add to simmering spices. Continue until all meat is done.

Saute chopped onion and garlic in 1 T. oil or suet. Add to spices and meat mixture. Add water as needed. Simmer 2 hours. Add mole, sugar, coriander seed, hot sauce and tomato sauce. Simmer 45 min.

Dissolve masa harina flour in warm water to form a paste. Add to chili. Add salt to taste. Simmer for 30 minutes. Add additional Louisiana Hot Sauce for hotter taste.

Makes 1 pot.

Best "Texas" Chili - Weight Watchers Favorite


Yield: 8 Servings

4 tsp oil, olive
2 cup onions, chopped
1 cup celery, finely chopped
3 garlic cloves
1 lb beef, ground, lean, broiled
2 cup tomatoes, plum italian
- (canned, res, erve liquid)
2 cup tomato sauce
12 oz beans, kidney red cooked
-and drain, ed
12 oz beans, pinto cooked
2 Tbsp sugar, granulated
3 bay leaves
3 allspice, whole
1 Tbsp chili powder
1 tsp oregano, dried
1/2 tsp pepper, black freshly ground
1/4 tsp cumin, ground
1/4 tsp pepper, red ground

In medium nonstick skillet, heat oil, add onions, celery, and
garlic; cook over medium heat until softened, about 2 minutes.
Place vegetables and remaining ingredients in slow-cooker; stir
to combine. Cook on low setting 4 hours.
